Corn Casserole

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 10
  • 1 large onion, chopped
  • 2 medium green peppers, chopped
  • 1/2 cup butter or 1/2 cup margarine
  • 1/4 cup all-purpose flour
  • 2 cups frozen corn (or canned)
  • 2 cups cooked long-grain rice
  • 1 (14 1/2 ounce) can diced tomatoes with juice
  • 4 hard-cooked eggs, chopped
  • 2 1/2 cups shredded sharp cheddar cheese, divided
  • 2 tablespoons worcestershire sauce
  • 2 -3 teaspoons hot pepper sauce
  • 2 teaspoons salt
  • 1 teaspoon pepper

Recipe

  • 1 in a large skillet, sauté onion and peppers in butter until tender.
  • 2 stir in flour.
  • 3 remove from heat; add remaining ingredients except for ½ cup cheese.
  • 4 pour into a greased 2 ½ quart baking dish. bake, uncovered, at 350 degrees f for 45 minutes.
  • 5 top with remaining cheese; let stand 5 minutes.
