Chili-cheese Bake

Ingredients
- 3 cups cooked rice
- 2 garlic cloves, minced
- 1 (4 ounce) can chopped green chilies
- 1 (15 1/2 ounce) can red kidney beans, rinsed and drained
- 1 medium onion, chopped
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon creole seasoning
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 2 cups shredded cheddar cheese, divided
Recipe
- 1 in a 2 quart baking dish, combine all ingredients, except cheese.
- 2 top with 1 1/2 cups of cheese.
- 3 bake, covered at 350 degrees for 25 minutes.
- 4 top with remaining cheese.
- 5 then bake, uncovered, for 10 minutes, more.
