Chili-cheese Bake

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 3 cups cooked rice
  • 2 garlic cloves, minced
  • 1 (4 ounce) can chopped green chilies
  • 1 (15 1/2 ounce) can red kidney beans, rinsed and drained
  • 1 medium onion, chopped
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon creole seasoning
  • 2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 2 cups shredded cheddar cheese, divided

Recipe

  • 1 in a 2 quart baking dish, combine all ingredients, except cheese.
  • 2 top with 1 1/2 cups of cheese.
  • 3 bake, covered at 350 degrees for 25 minutes.
  • 4 top with remaining cheese.
  • 5 then bake, uncovered, for 10 minutes, more.
