Cheese Tortellini With Squash Puree

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb cheese tortellini
  • 11 ounces frozen squash, puree, thawed
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 tablespoon parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • salt and pepper

Recipe

  • 1 cook tortellini according to package directions, drain and set aside.
  • 2 combine remaining ingredients, except parsley, salt and pepper, in a saucepan.
  • 3 cook over medium heat until heated through and combined. if it is too thick, add a bit of water.
  • 4 combine sauce with cooked tortellini, sprinkle with parsely and serve.
