20-minute Chicken & Rice With Broccoli - K

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 tablespoon oil
  • 4 small boneless skinless chicken breast halves (about 1 lb.)
  • 1 (10 3/4 ounce) can condensed cream of chicken soup
  • 2 cups minute rice, uncooked
  • 2 cups broccoli florets (fresh or frozen, thawed)

Recipe

  • 1 heat oil in large non-stick skillet on medium-high heat.
  • 2 add chicken, cover and cook 4 minutes on each side or until cooked through.
  • 3 remove chicken from skillet.
  • 4 add soup and 1 soup can (1-1/3 cups) water to skillet; stir.
  • 5 bring to boil and stir in rice and broccoli.
  • 6 top with chicken; cover and cook on low heat 5 minutes.
  • 7 season to taste.
