Chicken Continental

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 3 lbs chicken (whole bone-in chicken or boneless chicken breast)
  • 1/4 cup flour
  • 2 tablespoons oil
  • 8 ounces sliced mushrooms
  • 15 ounces chopped tomatoes
  • 1/3 cup soy sauce
  • 1 minced garlic clove
  • 1 medium onion, sliced thinly
  • 1/4 cup sliced black olives
  • 3 cups cooked rice

Recipe

  • 1 heat oil in a large skillet.
  • 2 dredge chicken in flour and brown in oil.
  • 3 mix drained mushroom liquid, tomatoes, soy sauce, and garlic in a bowl.
  • 4 add sauce and sliced onions to chicken in skillet.
  • 5 lower heat and simmer covered for 30 to 45 min or until chicken juices run clear.
  • 6 add mushrooms and olives.
  • 7 cook until heated through.
  • 8 serve over rice.
