Cottage Cheese With Vermicelli Fritters

Ingredients
- Servings: 4
- 6 ounces cooked vermicelli
- 2 cups cottage cheese
- 3 eggs, seperated
- 3 tablespoons chopped fresh chives
- 1 bunch scallion, finely chopped (green onions, spring onions)
- 1 ounce flour
- salt
- black pepper
- 1 -2 tablespoon vegetable oil
Recipe
- 1 mix the vermicelli with the cottage cheese, egg yolks, chives, scallions, flour, salt and pepper.
- 2 whisk the egg whites until stiff then fold lightly into the cottage cheese mixture.
- 3 brush the base of a large non stick pan with a little of oil. drop tablespoonfuls of the mixture into the pan, cook until the undersides are brown, then turn and brown the other side. drain very well on paper towels.
- 4 keep warm in a low oven while cooking the remainder of the mixture in the same way.
