Cottage Cheese With Vermicelli Fritters

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 6 ounces cooked vermicelli
  • 2 cups cottage cheese
  • 3 eggs, seperated
  • 3 tablespoons chopped fresh chives
  • 1 bunch scallion, finely chopped (green onions, spring onions)
  • 1 ounce flour
  • salt
  • black pepper
  • 1 -2 tablespoon vegetable oil

Recipe

  • 1 mix the vermicelli with the cottage cheese, egg yolks, chives, scallions, flour, salt and pepper.
  • 2 whisk the egg whites until stiff then fold lightly into the cottage cheese mixture.
  • 3 brush the base of a large non stick pan with a little of oil. drop tablespoonfuls of the mixture into the pan, cook until the undersides are brown, then turn and brown the other side. drain very well on paper towels.
  • 4 keep warm in a low oven while cooking the remainder of the mixture in the same way.
