Chicken And Rice Casserole

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 cups cooked rice
  • 2 cups shredded monterey jack cheese
  • 1 1/2 cups chopped cooked chicken (if using canned-drain well)
  • 1 (12 ounce) can evaporated milk
  • 1/2 cup finely chopped red onion
  • 2 large eggs, lightly beaten
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons butter, melted

Recipe

  • 1 preheat oven to 350.
  • 2 lightly grease 2qt casserole dish.
  • 3 combine rice, cheese, chicken, evaporated milk, onion, eggs, butter,cilanro, in prepared dish stir well.
  • 4 bake at 350 for 60-70 minutes or until knife inserted in middle comes out clean.
