Ingredients
- Servings: 4
- 2 cups cooked rice
- 2 cups shredded monterey jack cheese
- 1 1/2 cups chopped cooked chicken (if using canned-drain well)
- 1 (12 ounce) can evaporated milk
- 1/2 cup finely chopped red onion
- 2 large eggs, lightly beaten
- 1/4 cup chopped fresh cilantro
- 2 tablespoons butter, melted
Recipe
- 1 preheat oven to 350.
- 2 lightly grease 2qt casserole dish.
- 3 combine rice, cheese, chicken, evaporated milk, onion, eggs, butter,cilanro, in prepared dish stir well.
- 4 bake at 350 for 60-70 minutes or until knife inserted in middle comes out clean.
