Corn And Green Chile Rice

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • Servings: 8
  • 1 cup uncooked long-grain rice
  • 2 cups water
  • 1 cup cottage cheese
  • 1 (11 ounce) can mexicorn
  • 1 (8 ounce) container sour cream
  • 1 (4 1/2 ounce) can chopped green chilies
  • salt and pepper (to taste)
  • 1 cup shredded mexican blend cheese

Recipe

  • 1 cook rice in water according to package directions.
  • 2 preheat oven to 350°.
  • 3 add the cooked rice, cottage cheese, corn, sour cream, chopped chiles, salt and pepper to a large bowl; mix well.
  • 4 pour mixture into a greased 2-quart casserole dish.
  • 5 sprinkle with cheese.
  • 6 bake for 30-35 minutes or until well heated and cheese is melted.
