Chicken Zucchini Casserole

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 cups boneless skinless chicken breasts, cut into bite size pieces
  • 2 tablespoons olive oil
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon garlic powder
  • 2 cups fresh zucchini, sliced
  • 2 medium onions, chopped coarsly
  • 1 1/2 cups chicken broth
  • 4 cups cooked spiral shaped pasta
  • 1 cup light cream
  • 1 cup gruyere cheese, grated

Recipe

  • 1 saute the chicken in olive oil until no longer pink.
  • 2 add onions, zucchini and poultry season
  • 3 saute for 2 - 3 minutes then add the chicken broth.
  • 4 simmer another few minutes until zucchini is tender. remove from heat.
  • 5 add chicken and vegetables to cooked pasta in a casserole dish.
  • 6 pour cream over, stir gently and top with cheese.
  • 7 bake for 30 minutes until cheese is brown.
  • 8 serve with green salad.
