Chicken With Orzo And Veggies

Ingredients

  • Servings: 4
  • 3 tablespoons olive oil
  • 1 large red onion, finely chopped
  • 4 garlic cloves, smashed
  • 1 sweet red pepper, diced
  • 1 (14 ounce) can chicken broth
  • 2 cups broccoli florets, cut into bite-size pieces
  • 3/4 cup orzo pasta, uncooked
  • 1 lb boneless skinless chicken breast, cut into 1 inch pieces
  • 1 1/2 cups corn (fresh or frozen)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper, fresh ground
  • 3/4 cup parmesan cheese, shredded

Recipe

  • 1 heat oil in a large frypan over medium high heat. add onion, garlic and red pepper. cook 2 minutes. add broth, broccoli and orzo.
  • 2 reduce heat to medium, cover and cook for 6 minutes, stirring occasionally.
  • 3 add chicken and corn, cook an additional 8 minutes or until chicken juices run clear.
  • 4 remove from heat, season with salt and pepper and gently stir in cheese.
  • 5 serve immediately.
