Chicken, Barley, And Bow Tie Soup

Ingredients

  • Servings: 10
  • 1 1/2 lbs boneless skinless chicken breasts, cut into 1 inch pieces
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cups thinly sliced peeled carrots
  • 1 bay leaf
  • 8 cups water
  • 4 cups canned fat-free chicken broth
  • 1/2 cup pearl barley
  • salt and pepper
  • 1/2 teaspoon dried basil leaves
  • 1 (8 ounce) package bow tie pasta

Recipe

  • 1 place the first 5 ingredients in a large pot filled with the water and broth.
  • 2 bring the water and broth to a boil, and add the barley.
  • 3 reduce the heat, cover, and cook until the chicken and barley are done, about 30 minutes.
  • 4 season with the salt and pepper and add the basil.
  • 5 meanwhile, cook the pasta according to package directions, omitting oil and salt.
