Chicken, Barley, And Bow Tie Soup

Ingredients

- 1 1/2 lbs boneless skinless chicken breasts, cut into 1 inch pieces
- 1 cup chopped celery
- 1 cup chopped onion
- 2 cups thinly sliced peeled carrots
- 1 bay leaf
- 8 cups water
- 4 cups canned fat-free chicken broth
- 1/2 cup pearl barley
- salt and pepper
- 1/2 teaspoon dried basil leaves
- 1 (8 ounce) package bow tie pasta
Recipe
- 1 place the first 5 ingredients in a large pot filled with the water and broth.
- 2 bring the water and broth to a boil, and add the barley.
- 3 reduce the heat, cover, and cook until the chicken and barley are done, about 30 minutes.
- 4 season with the salt and pepper and add the basil.
- 5 meanwhile, cook the pasta according to package directions, omitting oil and salt.
- 6 drain.
- 7 add the pasta to the chicken soup, and remove the bay leaf.
