Cheese Ravioli With Toasted Walnuts

Ingredients

- 14 ounces cheese ravioli
- 1/3 cup olive oil
- 1/4 cup walnuts
- 1 garlic clove
- 2 teaspoons lemon juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/2 cup fresh flat leaf parsley, chopped
- 1/4 cup parmesan cheese, grated
Recipe
- 1 prepare the ravioli according to the directions on the package. drain well and reserve 3 tbsp of the cooking water.
- 2 meanwhile, roughly chop the walnuts and thinly slice the garlic.
- 3 heat the oil in a medium skillet. add nuts and garlic, stirring until walnuts are lightly toasted and fragrant, about 5 minutes.
- 4 add the lemon juice, salt, pepper, parsley and cooking water.
- 5 add the ravioli, toss to coat.
- 6 serve with parmesan cheese.
