Cheese Ravioli With Toasted Walnuts

Ingredients

  • Servings: 4
  • 14 ounces cheese ravioli
  • 1/3 cup olive oil
  • 1/4 cup walnuts
  • 1 garlic clove
  • 2 teaspoons lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/2 cup fresh flat leaf parsley, chopped
  • 1/4 cup parmesan cheese, grated

Recipe

  • 1 prepare the ravioli according to the directions on the package. drain well and reserve 3 tbsp of the cooking water.
  • 2 meanwhile, roughly chop the walnuts and thinly slice the garlic.
  • 3 heat the oil in a medium skillet. add nuts and garlic, stirring until walnuts are lightly toasted and fragrant, about 5 minutes.
  • 4 add the lemon juice, salt, pepper, parsley and cooking water.
  • 5 add the ravioli, toss to coat.
  • 6 serve with parmesan cheese.
