Chicken With Pepperoni And Spinach

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 red onion, finely sliced
  • 1 clove garlic, minced
  • 50 g pepperoni, thinly sliced
  • 1 large chicken breast, cut into chunks
  • 1 tablespoon olive oil
  • 1 (400 g) can chopped tomatoes
  • salt and pepper
  • 100 g spinach
  • 1 bunch coriander

Recipe

  • 1 heat the olive oil in a pan and stir in the onion and garlic.
  • 2 cook for several minutes, until the onion is soft.
  • 3 stir in the pepperoni and cook for another couple minutes, then add the the chicken.
  • 4 cook until brown and then add the chopped tomatoes.
  • 5 season with salt and pepper and simmer for about 10 minutes, until the chicken is cooked through.
  • 6 meanwhile, shred the spinach and coarsely chop the coriander.
  • 7 if the stew is looking dry, add a bit of water and reduce the heat.
  • 8 stir in the spinach and allow it to wilt, then add the coriander.
  • 9 serve over a short pasta, such as penne, or with boiled rice.
