Chicken With Pepperoni And Spinach

Ingredients

- 1 red onion, finely sliced
- 1 clove garlic, minced
- 50 g pepperoni, thinly sliced
- 1 large chicken breast, cut into chunks
- 1 tablespoon olive oil
- 1 (400 g) can chopped tomatoes
- salt and pepper
- 100 g spinach
- 1 bunch coriander
Recipe
- 1 heat the olive oil in a pan and stir in the onion and garlic.
- 2 cook for several minutes, until the onion is soft.
- 3 stir in the pepperoni and cook for another couple minutes, then add the the chicken.
- 4 cook until brown and then add the chopped tomatoes.
- 5 season with salt and pepper and simmer for about 10 minutes, until the chicken is cooked through.
- 6 meanwhile, shred the spinach and coarsely chop the coriander.
- 7 if the stew is looking dry, add a bit of water and reduce the heat.
- 8 stir in the spinach and allow it to wilt, then add the coriander.
- 9 serve over a short pasta, such as penne, or with boiled rice.
