Best Brown Rice Meal

Ingredients
- 4 cups cooked brown rice
- 1 small onion, chopped (more if desired)
- 2 garlic cloves, minced
- 3 carrots, peeled and chopped
- 2 celery ribs, chopped
- 2 tablespoons olive oil
- 1 -2 cup cheddar cheese, grated
- 2 cups lightly salted shelled sunflower seeds
Recipe
- 1 cook brown rice according to package directions and set aside.
- 2 chop, onion, celery, carrot and mince garlic.
- 3 place olive oil in a large skillet and heat over medium-high. add the onion, garlic, carrot, and celery and stir to combine. continue to stir until vegetables are tender and aromatic; about 5 minutes.
