Best Brown Rice Meal

Total Time: 1 hr 25 mins Preparation Time: 10 mins Cook Time: 1 hr 15 mins

Ingredients

  • 4 cups cooked brown rice
  • 1 small onion, chopped (more if desired)
  • 2 garlic cloves, minced
  • 3 carrots, peeled and chopped
  • 2 celery ribs, chopped
  • 2 tablespoons olive oil
  • 1 -2 cup cheddar cheese, grated
  • 2 cups lightly salted shelled sunflower seeds

Recipe

  • 1 cook brown rice according to package directions and set aside.
  • 2 chop, onion, celery, carrot and mince garlic.
  • 3 place olive oil in a large skillet and heat over medium-high. add the onion, garlic, carrot, and celery and stir to combine. continue to stir until vegetables are tender and aromatic; about 5 minutes.
  • 4 add the cooked brown rice to the skillet and stir well to combine all ingredients.
