Coconut And Saffron Creamy Rice

Ingredients

- 1 pinch saffron thread
- 560 ml hot water
- 310 ml light coconut cream
- 3/4 cup long-grain rice
- 1/2 cup sugar
- 1 tablespoon sultana
Recipe
- 1 place medium pot over low heat.
- 2 add saffron threads, cook 30 seconds till aromatic.
- 3 stir in water, increase heat to medium.
- 4 add coconut cream, rice, sugar and sultanas.
- 5 cook , stirring till mix comes to the boil.
- 6 reduce heat, simmer uncovered, stir occasionally for 20 minutes till rice is cooked and mixture is thick and creamy.
- 7 spoon into bowls and serve straight away.
