Creamy Bow Ties With Bacon, Tomatoes And Peas

Ingredients

- 1 lb farfalle pasta (i suggest only 12 oz.)
- 1 tablespoon extra virgin olive oil
- 5 slices bacon, chopped
- 1 large onion
- 3 grated garlic cloves
- 1 bay leaf
- 12 mushrooms
- 24 ounces crushed tomatoes, canned
- 10 ounces frozen peas
- 1/4 cup mascarpone cheese
- 1/2 cup basil leaves, chopped
Recipe
- 1 prepare farfalle (bow tie pasta) according to package directions.
- 2 in a large pan heat olive oil and add bacon strips. crisp well and break them up.
- 3 add onions, garlic, bay leaf and mushroom and sauté until soft.
- 4 add salt, pepper and tomatoes.
- 5 simmer on low for about 15 minutes.
- 6 remove from heat and stir in the frozen peas.
- 7 return to heat and add marscapone and bring to a bubble.
- 8 taste and adjust seasoning, if needed.
- 9 mix pasta into sauce.
- 10 just before serving, add basil to the pasta and mix through.
- 11 healthier ideas: try dropping the bacon to 2 slices and omit oil.
- 12 variation: consider dropping the bacon and oil altogether, then add some type of lamb to create a hearty, one-dish meal. yum!
