Creamy Bow Ties With Bacon, Tomatoes And Peas

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • salt
  • pepper
  • 1 lb farfalle pasta (i suggest only 12 oz.)
  • 1 tablespoon extra virgin olive oil
  • 5 slices bacon, chopped
  • 1 large onion
  • 3 grated garlic cloves
  • 1 bay leaf
  • 12 mushrooms
  • 24 ounces crushed tomatoes, canned
  • 10 ounces frozen peas
  • 1/4 cup mascarpone cheese
  • 1/2 cup basil leaves, chopped

Recipe

  • 1 prepare farfalle (bow tie pasta) according to package directions.
  • 2 in a large pan heat olive oil and add bacon strips. crisp well and break them up.
  • 3 add onions, garlic, bay leaf and mushroom and sauté until soft.
  • 4 add salt, pepper and tomatoes.
  • 5 simmer on low for about 15 minutes.
  • 6 remove from heat and stir in the frozen peas.
  • 7 return to heat and add marscapone and bring to a bubble.
  • 8 taste and adjust seasoning, if needed.
  • 9 mix pasta into sauce.
  • 10 just before serving, add basil to the pasta and mix through.
  • 11 healthier ideas: try dropping the bacon to 2 slices and omit oil.
  • 12 variation: consider dropping the bacon and oil altogether, then add some type of lamb to create a hearty, one-dish meal. yum!
