Creamy Baked Lemon Pasta

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 1 lb thin spaghetti
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 lemon, juice and zest
  • 2 cups sour cream (please, no non fat here)
  • 1 teaspoon salt
  • 1/2 cup parmesan cheese
  • fresh parsley, to garnish
  • lemon juice, to garnish

Recipe

  • 1 boil pasta according to package, just slightly less, do not overcook!
  • 2 meanwhile, heat butter and oil over low heat until melted, add garlic for a couple minutes. add lemon juice and turn off heat.
  • 3 mix sour cream, salt and zest to garlic/oil and toss with pasta.
  • 4 put in a baking dish and bake covered at 375 for 15 minutes, uncover and bake 10 more.
  • 5 serve with parmesan cheese, parsley and more lemon.
