Creamy Baked Lemon Pasta

Ingredients
- Servings: 6
- 1 lb thin spaghetti
- 2 tablespoons butter
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 lemon, juice and zest
- 2 cups sour cream (please, no non fat here)
- 1 teaspoon salt
- 1/2 cup parmesan cheese
- fresh parsley, to garnish
- lemon juice, to garnish
Recipe
- 1 boil pasta according to package, just slightly less, do not overcook!
- 2 meanwhile, heat butter and oil over low heat until melted, add garlic for a couple minutes. add lemon juice and turn off heat.
- 3 mix sour cream, salt and zest to garlic/oil and toss with pasta.
- 4 put in a baking dish and bake covered at 375 for 15 minutes, uncover and bake 10 more.
- 5 serve with parmesan cheese, parsley and more lemon.
