Cheesy Polenta Casserole With Roasted Bell Pepper Sauce

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 cups tomato-basil pasta sauce
  • 1/4 pitted kalamata olive, chopped
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon fresh ground black pepper
  • 1 (7 ounce) bottle roasted red peppers, drained and sliced
  • 1 (16 ounce) package polenta, cut in 12 slices
  • 3/4 cup mozzarella cheese, shredded
  • 2 tablespoons fresh parmesan cheese, grated

Recipe

  • 1 preheat oven to 350.
  • 2 combine first 5 ingredients in a saucepan. simmer 10 minutes.
  • 3 spread sauce in bottom of a greased 13 x 9 baking dish.
  • 4 arrange the polenta slices over the sauce.
  • 5 spread remaining sauce over.
  • 6 sprinkle with cheeses.
  • 7 bake 20 minutes.
