Confetti Rice Pilaf

Total Time: 42 mins Preparation Time: 10 mins Cook Time: 32 mins

Ingredients

  • 1 tablespoon olive oil or 1 tablespoon butter
  • 1 small onion, finely chopped
  • 1 carrot, finely chopped
  • 1 garlic clove, crushed with press
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 1 cup long-grain rice
  • 1 (14 -14 1/2 ounce) can chicken broth
  • 1/4 cup water
  • 1/4 cup fresh parsley leaves, chopped

Recipe

  • 1 in 3-quart saucepan, heat olive oil on medium.
  • 2 add onion, carrot, garlic, 1/4 teaspoon each salt and coarsely ground black pepper; cook 6 to 8 minutes or until vegetables are tender, stirring occasionally.
  • 3 add rice, stirring to coat; cook 1 minute.
  • 4 add broth and water to pan; heat to boiling on high. reduce to low;cover and simmer 16 to 18 minutes or until all liquid is absorbed and rice is tender.
  • 5 remove from heat; let stand,covered, 5 minutes.
  • 6 fluff rice with fork; stir in parsley to serve.
