Chicken-tomato-basil Soup

Ingredients

  • Servings: 4
  • 2 boneless skinless chicken breasts, cut into 1/2-inch pieces (about 1/2 lb.)
  • 1/2 teaspoon garlic pepper seasoning
  • 2 (19 ounce) cans progresso tomato basil soup
  • 1/2 cup uncooked orzo pasta (3 oz.)
  • 1 small zucchini, diced
  • 1/4 cup shredded parmesan cheese

Recipe

  • 1 heat a 3-quart nonstick saucepan over medium heat.
  • 2 add chicken; sprinkle with garlic-pepper (if you don't have garlic-pepper, substitute 1/4 teaspoon each garlic powder and coarse ground black pepper).
  • 3 cook and stir 3-5 minutes or until browned.
  • 4 add soup and orzo; mix well.
  • 5 heat to boiling; decrease heat to med-low.
  • 6 simmer uncovered 10-15 minutes or until chicken is no longer pink in center and orzo is tender.
  • 7 stir in zucchini; cook 2-3 minutes, stirring occasionally.
  • 8 sprinkle each serving with 1 tablespoon cheese.
