Chicken Spinach Pasta

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs penne pasta, cooked according to directions
  • 1/2 large vidalia onion, finely chopped
  • 4 tablespoons minced garlic
  • 2 tablespoons butter
  • 4 tablespoons olive oil
  • 1 lb fresh spinach, ripped into peieces
  • 2 lbs boneless skinless chicken breasts, sliced
  • 1/2 cup olive oil
  • 1/4 cup water from the pasta
  • salt
  • fresh ground pepper

Recipe

  • 1 in a large saucepan, melt butter and add the 4 tablespoons of olive oil.
  • 2 add finely chopped onion and garlic and saute until onion is almost translucent.
  • 3 add chicken and cook until chicken is done.
  • 4 remove from pan.
  • 5 add pasta liquid and spinach, continuing to add as it wilts and makes space for more.
  • 6 add chicken mixture back to the pan.
  • 7 mix it with the spinach, and add 1/2 of the olive oil.
  • 8 add salt and pepper to taste.
  • 9 add pasta, toss and mix in the rest of the olive oil.
  • 10 tada! it's ready to eat!
