Chicken Spinach Pasta

Ingredients
- Servings: 6
- 1 1/2 lbs penne pasta, cooked according to directions
- 1/2 large vidalia onion, finely chopped
- 4 tablespoons minced garlic
- 2 tablespoons butter
- 4 tablespoons olive oil
- 1 lb fresh spinach, ripped into peieces
- 2 lbs boneless skinless chicken breasts, sliced
- 1/2 cup olive oil
- 1/4 cup water from the pasta
- salt
- fresh ground pepper
Recipe
- 1 in a large saucepan, melt butter and add the 4 tablespoons of olive oil.
- 2 add finely chopped onion and garlic and saute until onion is almost translucent.
- 3 add chicken and cook until chicken is done.
- 4 remove from pan.
- 5 add pasta liquid and spinach, continuing to add as it wilts and makes space for more.
- 6 add chicken mixture back to the pan.
- 7 mix it with the spinach, and add 1/2 of the olive oil.
- 8 add salt and pepper to taste.
- 9 add pasta, toss and mix in the rest of the olive oil.
- 10 tada! it's ready to eat!
