Chicken-couscous Hot Dish

Ingredients
- Servings: 4
- 1 (6 ounce) package couscous with sun-dried tomatoes
- 4 boneless skinless chicken breast halves (lightly seasoned with salt and black pepper)
- 2 garlic cloves, finely chopped
- 1 (16 ounce) package button mushrooms, halved (lightly sauteed in 1 teaspoon olive oil)
- 1 1/4 cups water
- 1 tablespoon olive oil
- 1/4 teaspoon dried basil
Recipe
- 1 spread couscous and tomatoes evenly onto bottom of a lightly greased, 10-inch square baking dish.
- 2 place chicken over top.
- 3 sprinkle garlic over chicken.
- 4 top with mushrooms, including liquid.
- 5 pour water over top.
- 6 drizzle evenly with olive oil.
- 7 sprinkle with basil.
- 8 cover and bake 35 to 40 minutes or until chicken is done.
