Chicken-couscous Hot Dish

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 (6 ounce) package couscous with sun-dried tomatoes
  • 4 boneless skinless chicken breast halves (lightly seasoned with salt and black pepper)
  • 2 garlic cloves, finely chopped
  • 1 (16 ounce) package button mushrooms, halved (lightly sauteed in 1 teaspoon olive oil)
  • 1 1/4 cups water
  • 1 tablespoon olive oil
  • 1/4 teaspoon dried basil

Recipe

  • 1 spread couscous and tomatoes evenly onto bottom of a lightly greased, 10-inch square baking dish.
  • 2 place chicken over top.
  • 3 sprinkle garlic over chicken.
  • 4 top with mushrooms, including liquid.
  • 5 pour water over top.
  • 6 drizzle evenly with olive oil.
  • 7 sprinkle with basil.
  • 8 cover and bake 35 to 40 minutes or until chicken is done.
