Caribbean Rice And Beans

Ingredients

- coconut oil or olive oil
- 1 large onion, chopped
- 16 ounces rice (uncooked)
- 1 (16 ounce) can red beans (or kidney beans)
- 16 ounces coconut milk
- 16 ounces chicken stock
- 1 tablespoon fresh thyme
- 3/4 teaspoon allspice
- 2 bay leaves
- 3 scallions, chopped
- 2 -3 garlic, minced
- 1 scotch bonnet pepper, whole
- 1 -2 teaspoon brown sugar
- salt, pepper
Recipe
- 1 add oil to a pan and add onions. when onions are soft, add rice. stir. cook for 1-2 minutes.
- 2 then add rest of ingredients. bring to a boil and simmer until rice is done. keep checking and add water or more chicken stock if necessary.
- 3 once done, pull out the bay leaves before serving.
