Black-eyed Peas Cornbread

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 medium onion, chopped
  • 1 (15 ounce) can creamed corn
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can black-eyed peas, drained
  • 1 tablespoon baking powder
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup oil or 1/2 cup bacon drippings

Recipe

  • 1 preheat the oven to 350 degrees. grease a 9x13 inch baking dish.
  • 2 in a large bowl, mix all the ingredients together. pour into the prepared dish and bake for 25 to 35 minutes or until golden brown.
  • 3 cool 30 minutes before serving.
