Bacon & Cabbage Pappardelle

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/4 head cabbage, thinly sliced
  • 1 onion, finely chopped
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 lb bacon, chopped
  • 1 cup sour cream
  • 1 (250 g) package pappardelle pasta
  • salt and pepper

Recipe

  • 1 in a large pot, add the olive oil and bacon and cook until well done. drain and set the bacon back in the pot, reserving the bacon fat.
  • 2 in a large pan, add the butter and onions and saute until soft. add the cabbage and cook until tender and slightly golden. add a drizzle of olive oil and season with salt and pepper.
  • 3 transfer the cabbage mixture to the pot with the bacon pieces and some of the bacon fat for moisture if needed.
  • 4 cook noodles according to the package directions. once cooked, drain (reserving some of the pasta water) and add the noodles to the cabbage pot.
  • 5 add sour cream and toss to combine. add some of the pasta water to moisten pasta if required.
