Bacon & Cabbage Pappardelle

Ingredients

- 1/4 head cabbage, thinly sliced
- 1 onion, finely chopped
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 lb bacon, chopped
- 1 cup sour cream
- 1 (250 g) package pappardelle pasta
- salt and pepper
Recipe
- 1 in a large pot, add the olive oil and bacon and cook until well done. drain and set the bacon back in the pot, reserving the bacon fat.
- 2 in a large pan, add the butter and onions and saute until soft. add the cabbage and cook until tender and slightly golden. add a drizzle of olive oil and season with salt and pepper.
- 3 transfer the cabbage mixture to the pot with the bacon pieces and some of the bacon fat for moisture if needed.
- 4 cook noodles according to the package directions. once cooked, drain (reserving some of the pasta water) and add the noodles to the cabbage pot.
- 5 add sour cream and toss to combine. add some of the pasta water to moisten pasta if required.
