Chicken, Spinach And Rotini Salad

Ingredients

- 6 ounces rotini pasta
- 1/4 cup sesame seeds
- 1/2 cup salad oil
- 1/3 cup soy sauce
- 1/3 cup wine vinegar
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 cups cooked chicken, cooled, shredded
- 1/2 cup fresh parsley, chopped
- 1/2 cup green onion, sliced
- 8 cups baby spinach leaves
- 1/2 cup almonds
Recipe
- 1 boil pasta in salted water as directed on the package.
- 2 drain, rinse, drain.
- 3 put pasta in a large bowl.
- 4 in a small frying pan, combine the sesame seeds and 1/4 cup of the oil.
- 5 cook over med-low heat until seeds are golden (about 2 minutes).
- 6 remove from heat and let cool.
- 7 stir in remaining oil, soy sauce, vinegar, sugar, salt and pepper.
- 8 pour over the cooked pasta.
- 9 add chicken and toss gently.
- 10 cover and chill for at least 2 hours.
- 11 when ready to serve, add parsley, onion and spinach and toss gently.
