Chicken, Spinach And Rotini Salad

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 6 ounces rotini pasta
  • 1/4 cup sesame seeds
  • 1/2 cup salad oil
  • 1/3 cup soy sauce
  • 1/3 cup wine vinegar
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups cooked chicken, cooled, shredded
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup green onion, sliced
  • 8 cups baby spinach leaves
  • 1/2 cup almonds

Recipe

  • 1 boil pasta in salted water as directed on the package.
  • 2 drain, rinse, drain.
  • 3 put pasta in a large bowl.
  • 4 in a small frying pan, combine the sesame seeds and 1/4 cup of the oil.
  • 5 cook over med-low heat until seeds are golden (about 2 minutes).
  • 6 remove from heat and let cool.
  • 7 stir in remaining oil, soy sauce, vinegar, sugar, salt and pepper.
  • 8 pour over the cooked pasta.
  • 9 add chicken and toss gently.
  • 10 cover and chill for at least 2 hours.
  • 11 when ready to serve, add parsley, onion and spinach and toss gently.
