Chicken Apple Sausage, Sweet Corn And Rice Salad

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 1 cup long grain rice, freshly cooked according to pkg
  • 1/2 lb sausage (chicken apple)
  • 2 cups fresh corn kernels (from the cob)
  • 1 cup mozzarella cheese
  • 1/3 cup pine nuts, toasted
  • 5 ounces fresh spinach
  • salt and pepper
  • mustard vinaigrette
  • 1 tablespoon dijon mustard
  • 2 tablespoons red wine vinegar
  • 1/2 cup light olive oil
  • salt and pepper

Recipe

  • 1 start long grain rice.
  • 2 make mustard vinaigrette. in a glass bowl, add mustard and red wine vinegar, slowly add olive oil as you whisk. add s & p. set aside.
  • 3 in a skillet, fry sausage over med. heat, crumble as it cooks. add the corn and cook for 3 minutes stirring occasionally.
  • 4 place cooked rice in a large bowl, add the hot sausage mixture and the cheese. toss lightly.
  • 5 add the spinach and toss.
  • 6 when ready to serve, place on plate, top with pine nuts and mustard vinaigrette. enjoy.
