Chicken Apple Sausage, Sweet Corn And Rice Salad

Ingredients
- 1 cup long grain rice, freshly cooked according to pkg
- 1/2 lb sausage (chicken apple)
- 2 cups fresh corn kernels (from the cob)
- 1 cup mozzarella cheese
- 1/3 cup pine nuts, toasted
- 5 ounces fresh spinach
- salt and pepper
- mustard vinaigrette
- 1 tablespoon dijon mustard
- 2 tablespoons red wine vinegar
- 1/2 cup light olive oil
- salt and pepper
Recipe
- 1 start long grain rice.
- 2 make mustard vinaigrette. in a glass bowl, add mustard and red wine vinegar, slowly add olive oil as you whisk. add s & p. set aside.
- 3 in a skillet, fry sausage over med. heat, crumble as it cooks. add the corn and cook for 3 minutes stirring occasionally.
- 4 place cooked rice in a large bowl, add the hot sausage mixture and the cheese. toss lightly.
- 5 add the spinach and toss.
- 6 when ready to serve, place on plate, top with pine nuts and mustard vinaigrette. enjoy.
