Cheese Topped Southwestern Chili Macaroni

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 cups elbow macaroni
  • 1 (15 ounce) can chili without beans
  • 1 (3 ounce) can diced green chilies
  • 1 (14 ounce) can diced tomatoes
  • 1 cup chopped green pepper
  • 3 green onions, sliced
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 3/4 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Recipe

  • 1 cook macaroni according to pkg directions; drain.
  • 2 in dutch oven, heat remaining ingredients for 5 minutes, stirring often.
  • 3 mix in the drained macaroni.
  • 4 pour into 2 qt casserole dish.
  • 5 mix the 2 cheeses and sprinkle on top of casserole.
  • 6 bake at 375f for 15 minutes, until cheese is bubbly.
