Bechamel Sauce

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 tablespoons butter
  • 2 tablespoons flour (all-purpose)
  • 1/4 teaspoon salt
  • 1 1/4 cups chicken broth
  • 2 egg yolks (beaten)
  • 4 teaspoons lemon juice

Recipe

  • 1 in a saucepan melt the butter.
  • 2 stir in the flour and salt.
  • 3 add the chicken broth all at once.
  • 4 cook and stir until the mixture is bubbly.
  • 5 combine the egg yolks and lemon juice.
  • 6 stir about half of the hot mixture into the egg yolk mixture.
  • 7 return to the remaining hot mixture in the saucepan.
  • 8 cook and stir sauce 2 minutes more.
  • 9 makes 1 1/2 cups of sauce.
