Ingredients

- 2 tablespoons butter
- 2 tablespoons flour (all-purpose)
- 1/4 teaspoon salt
- 1 1/4 cups chicken broth
- 2 egg yolks (beaten)
- 4 teaspoons lemon juice
Recipe
- 1 in a saucepan melt the butter.
- 2 stir in the flour and salt.
- 3 add the chicken broth all at once.
- 4 cook and stir until the mixture is bubbly.
- 5 combine the egg yolks and lemon juice.
- 6 stir about half of the hot mixture into the egg yolk mixture.
- 7 return to the remaining hot mixture in the saucepan.
- 8 cook and stir sauce 2 minutes more.
- 9 makes 1 1/2 cups of sauce.
