Bacon Tomato Macaroni Cheese

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 250 g uncooked macaroni
  • 4 slices bacon, chopped
  • 30 g butter
  • 1 medium onion, chopped
  • 1 green capsicum, chopped (optional)
  • 2 tablespoons plain flour
  • 1 (454 g) can tomato soup
  • 1/2 cup water or 1/2 cup milk
  • 250 g cheese, grated
  • salt and pepper

Recipe

  • 1 cook macaroni in boiling salted water until tender (approx. 10 minutes), drain.
  • 2 add butter and saute bacon, onion and green capsicum for few minutes or until the bacon is cooked.
  • 3 add flour, stir for a minute then add the soup and milk/water, stirring until mixture boils and thickens.
  • 4 add 3/4 of the cheese and stir until it melts.
  • 5 season to taste.
  • 6 combine with the macaroni and pour into a buttered casserole dish.
  • 7 top with remaining cheese and bake in a moderate oven about 20 minutes or until heated through.
