Bacon Tomato Macaroni Cheese

Ingredients
- Servings: 4
- 250 g uncooked macaroni
- 4 slices bacon, chopped
- 30 g butter
- 1 medium onion, chopped
- 1 green capsicum, chopped (optional)
- 2 tablespoons plain flour
- 1 (454 g) can tomato soup
- 1/2 cup water or 1/2 cup milk
- 250 g cheese, grated
- salt and pepper
Recipe
- 1 cook macaroni in boiling salted water until tender (approx. 10 minutes), drain.
- 2 add butter and saute bacon, onion and green capsicum for few minutes or until the bacon is cooked.
- 3 add flour, stir for a minute then add the soup and milk/water, stirring until mixture boils and thickens.
- 4 add 3/4 of the cheese and stir until it melts.
- 5 season to taste.
- 6 combine with the macaroni and pour into a buttered casserole dish.
- 7 top with remaining cheese and bake in a moderate oven about 20 minutes or until heated through.
