Creamy Pea Risotto

Ingredients

- 1 onion
- 2 teaspoons oil
- 1 1/2 cups rice
- 1/2 cup apple juice
- 1 1/2-2 cups stock
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups frozen peas
- 1/2 cup parmesan cheese
Recipe
- 1 chop onions. put in medium pot and saute over medium heat until translucent.
- 2 add rice and stir for one minute.
- 3 add apple juice, 1 1/2 cups stock, salt and pepper. bring to a boil, then reduce heat to medium-low. cover and cook 15 minutes.
- 4 stir in peas and parmesan, adding more stock if needed, until creamy.
