Creamy Pea Risotto

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 onion
  • 2 teaspoons oil
  • 1 1/2 cups rice
  • 1/2 cup apple juice
  • 1 1/2-2 cups stock
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups frozen peas
  • 1/2 cup parmesan cheese

Recipe

  • 1 chop onions. put in medium pot and saute over medium heat until translucent.
  • 2 add rice and stir for one minute.
  • 3 add apple juice, 1 1/2 cups stock, salt and pepper. bring to a boil, then reduce heat to medium-low. cover and cook 15 minutes.
  • 4 stir in peas and parmesan, adding more stock if needed, until creamy.
