Creamy Orzo With Leeks And Parmesan

Ingredients

- 4 tablespoons butter
- 2 large leeks, cleaned and sliced thinly
- 1 cup chicken stock
- 1 cup orzo pasta
- 1/2 cup heavy cream
- salt and pepper
- ground nutmeg (optional)
- 4 tablespoons grated parmesan cheese
Recipe
- 1 cook orzo in boiling salted water and drain.
- 2 while orzo is cooking, melt butter in large sauté pan.
- 3 add leeks and cook over medium heat until they are softened.
- 4 add chicken stock and simmer until the stock almost disappears.
- 5 add cream to the sauté pan with the leek mixture.
- 6 add cooked orzo and heat thoroughly.
- 7 season with salt, pepper and nutmeg to your taste.
- 8 if it looks a little dry, add a little extra cream.
- 9 just before serving, add the parmesan and stir until it melts.
