Creamy Parmesan Mushroom Chicken

Ingredients

  • Servings: 4
  • 4 -5 boneless chicken breasts
  • salt and pepper
  • 3 tablespoons cooking oil (or as needed)
  • 1 small onion, chopped
  • 1 tablespoon minced fresh garlic (or to taste)
  • 2 cups sliced fresh mushrooms
  • 1/4 cup butter
  • 5 teaspoons flour
  • 1 cup half-and-half cream or 1 cup whole milk
  • 1/2 cup grated parmesan cheese

Recipe

  • 1 prepare a large serving dish or plate (make certain that it has high sides to hold the sauce from spilling).
  • 2 season chicken with salt and pepper.
  • 3 brown and cook the chicken breasts in oil on both sides until juices run clear and chicken is cooked through.
  • 4 place the cooked chicken in the serving dish.
  • 5 in the same frypan, saute the onions, garlic and fresh mushrooms in 1/4 cup butter until onions are soft (about 4-5 minutes).
  • 6 sprinkle with flour; stir until coated (about 1 minute).
  • 7 add in cream or milk (if using) bring to a boil simmer for about 2 minutes or until thickened.
  • 8 remove from heat.
  • 9 stir in 1/2 cup parmesan cheese.
  • 10 and pour the sauce over chicken in serving dish.
  • 11 sprinkle with more grated parmesan cheese before serving.
  • 12 serve this on top of cooked linguini or spaghetti pasta.
