Chili-cheese Rice Frittata

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 green pepper, chopped
  • 1 red onion, chopped
  • 1/2 cup sliced green onion
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 1/2 cups cooked rice
  • 1 1/2 cups shredded cheddar cheese
  • 1 medium tomato, seeded and chopped
  • 1 (4 ounce) can chopped green chilies, drained
  • 5 eggs
  • 1/3 cup milk
  • 1 -2 teaspoon worcestershire sauce
  • 1/2-1 teaspoon salt
  • 1/4-1/2 teaspoon hot sauce
  • salsa

Recipe

  • 1 in a 10-inch ovenproof skillet, melt butter.
  • 2 saute green pepper and onions until tender.
  • 3 remove skillet from heat and stir in rice, cheese,tomato, and chilies.
  • 4 in a bowl, mix together eggs, milk, worcestershire, salt, and hot sauce.
  • 5 stir into the rice mixture.
  • 6 bake, uncovered, at 350 degrees for 20-25 minutes or until tests done.
  • 7 cut into wedges and serve with salsa.
