Creamy Orzo

Total Time: 28 mins Preparation Time: 20 mins Cook Time: 8 mins

Ingredients

  • Servings: 12
  • 1 lb orzo pasta
  • 2 tablespoons olive oil
  • 1 large shallot, finely chopped
  • 1 garlic clove, minced
  • 1 (14 1/2 ounce) can diced tomatoes, juices drained
  • 1 cup frozen peas (optional) or 1 cup green beans (optional)
  • 1 1/4 cups whipping cream
  • 3/4 cup freshly grated parmesan cheese
  • salt and pepper

Recipe

  • 1 cook orzo in a large saucepan of salted water, until tender but still firm to the bite, approx 8 minites.
  • 2 meanwhile, saute the shallot and garlic in oil over medium heat. approx 2 minites.
  • 3 add the tomatoes and cook until tender. approx 8 minites.
  • 4 stir in the cream and peas, then orzo.
  • 5 remove from heat and toss to coat.
  • 6 add parmesan until sauce coats pasta thickly adding enough reserved cooking liquid to maintain a creamy consistency.
  • 7 season with salt-n-pep and serve!
