Chicken In Mushroom Cream Sauce

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • 6 boneless skinless chicken breasts
  • 1/2 cup chicken broth
  • salt and pepper, to taste
  • 8 ounces penne pasta (any shape will do)
  • 1 large sweet onion, chopped
  • 2 tablespoons garlic, chopped
  • 2 (8 ounce) packages mushrooms, sliced
  • 2 cups creme fraiche (can use sour cream)
  • 6 ounces feta cheese

Recipe

  • 1 in a large skillet, saute chicken breasts, onion and garlic in olive oil over medium heat. once breasts are browned, add chicken broth and salt and pepper to taste. let simmer for 15 to 20 minutes, or until chicken is cooked through and juices run clear.
  • 2 remove chicken from skillet and cube, add mushrooms and saute until soft. add cubed chicken, creme fraiche and feta. stir all together and heat through.
  • 3 put hot cooked pasta on plate, top with chicken mixture.
  • 4 note: cook pasta according to directions while chicken is simmering.
