Creamy Parmesan Orzo With Bacon

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 6 -8 ounces bacon, cut into 1-inch pieces
  • 2 -3 tablespoons butter
  • 1 onion, chopped
  • 1 -2 tablespoon fresh minced garlic
  • 1 lb orzo pasta
  • 4 1/2 cups chicken broth
  • 1/2 cup whipping cream
  • 1 cup grated parmesan cheese
  • 1 teaspoon dried thyme
  • salt and black pepper

Recipe

  • 1 cook the bacon in a large saucepan over medium heat until crisp; remove with a slotted spoon (you can drain the bacon fat or leave it).
  • 2 melt 2-3 tablespoons butter, then add in onions and garlic; saute until soft (about 5 minutes).
  • 3 add in the orzo and stir for about 2 minutes.
  • 4 slowly add in the 4-1/2 cups broth; simmer uncovered until the orzo is firm-tender and the broth is absorbed, stirring occasionally (this should take about 7-8 minutes).
  • 5 add in whipping cream and bring to a simmer.
  • 6 mix in parmesan cheese and thyme, then cooked bacon.
  • 7 season with salt and pepper.
  • 8 *note* you can thin with additional broth if desired.
