Creamy Parmesan Orzo With Bacon

Ingredients

- 6 -8 ounces bacon, cut into 1-inch pieces
- 2 -3 tablespoons butter
- 1 onion, chopped
- 1 -2 tablespoon fresh minced garlic
- 1 lb orzo pasta
- 4 1/2 cups chicken broth
- 1/2 cup whipping cream
- 1 cup grated parmesan cheese
- 1 teaspoon dried thyme
- salt and black pepper
Recipe
- 1 cook the bacon in a large saucepan over medium heat until crisp; remove with a slotted spoon (you can drain the bacon fat or leave it).
- 2 melt 2-3 tablespoons butter, then add in onions and garlic; saute until soft (about 5 minutes).
- 3 add in the orzo and stir for about 2 minutes.
- 4 slowly add in the 4-1/2 cups broth; simmer uncovered until the orzo is firm-tender and the broth is absorbed, stirring occasionally (this should take about 7-8 minutes).
- 5 add in whipping cream and bring to a simmer.
- 6 mix in parmesan cheese and thyme, then cooked bacon.
- 7 season with salt and pepper.
- 8 *note* you can thin with additional broth if desired.
