Creamy Pancetta Rice

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1/2 lb trimmed pancetta, diced
  • 1 large red onion, chopped
  • 1 3/4 cups half-and-half
  • 3 cups cooked rice
  • 1 1/2 cups dried sweetened cranberries
  • 1 cup chopped pistachio nut
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Recipe

  • 1 brown pancetta and onions in large skillet over medium heat, cook until onions begin to brown (about 8 minutes).
  • 2 add half-and-half; bring to a boil.
  • 3 remove from heat.
  • 4 add rice, cranberries, pistachios, salt and pepper.
