Baked Rice

Total Time: 27 mins Preparation Time: 10 mins Cook Time: 17 mins

Ingredients

  • Servings: 4
  • 2 1/2 tablespoons butter
  • 1/4 cup chopped onion
  • 1 garlic clove, chopped
  • 1 cup rice
  • 1 1/2 cups chicken broth
  • 1/2 teaspoon parsley
  • 1/2 teaspoon thyme
  • 1/2 teaspoon cayenne pepper
  • 1 bay leaf
  • 1/4 cup toasted pine nuts

Recipe

  • 1 preheat oven to 400°f.
  • 2 in ovenproof pan, melt 1 tbsp butter, saute onion& garlic until soft.
  • 3 stir in rice,coat.
  • 4 add broth and spices.
  • 5 cover and bake 17 minutes.
  • 6 stir in remaining butter and pine nuts.
