Creamy Pasta Alfredo

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 1/2 cups 1% fat cottage cheese
  • 2 garlic cloves, cut in half
  • 1/2 cup skim milk
  • 2 tablespoons flour
  • 3 teaspoons fresh lemon juice
  • 1 teaspoon leaves basil, crumbled
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon salt
  • 1/2 lb pasta, of your choice
  • 1 medium ripe tomato, cut in half, seeded & coarsely chopped

Recipe

  • 1 place cottage cheese, garlic and skim milk in food processor.
  • 2 process until there are no lumps.
  • 3 add flour, lemon juice, basil, mustard, pepper and salt.
  • 4 blend.
  • 5 set aside in a medium size saucepan.
  • 6 cook pasta according to directions and drain.
  • 7 place in large bowl.
  • 8 heat ingredients in saucepan over a medium-low heat and allow to thicken slightly.
  • 9 stir until sauce just begins to boil. do not allow sauce to come to a full boil.
  • 10 pour sauce over pasta and toss gently to coat.
  • 11 garnish with tomato. serve immediately.
