Chicken Orzo Skillet

Ingredients

- 1 teaspoon olive oil
- 3/4 lb boneless skinless chicken breast, cut into strips
- 2 cups mushrooms, sliced
- 1/2 cup onion, chopped
- 2 garlic cloves, minced
- 10 ounces cream of chicken soup
- 2/3 cup water
- 3/4 cup orzo pasta
- 1 cup carrot, shredded
- 1/4 teaspoon ground black pepper
- 1 tablespoon fresh basil, chopped
- 1 tomato, diced
Recipe
- 1 cook the chicken until well browned in the heated oil at medium-high heat in a large skillet.
- 2 add the mushrooms, onion and garlic.
- 3 cook and stir for 3 minutes.
- 4 add all of the other ingredients except for the tomato.
- 5 mix well and bring to a boil.
- 6 reduce the heat.
- 7 cover and simmer for 15 minutes, stirring occasionally.
- 8 add the tomato and if desired, more fresh basil, and stir to combine.
