Chicken Orzo Skillet

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 1 teaspoon olive oil
  • 3/4 lb boneless skinless chicken breast, cut into strips
  • 2 cups mushrooms, sliced
  • 1/2 cup onion, chopped
  • 2 garlic cloves, minced
  • 10 ounces cream of chicken soup
  • 2/3 cup water
  • 3/4 cup orzo pasta
  • 1 cup carrot, shredded
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon fresh basil, chopped
  • 1 tomato, diced

Recipe

  • 1 cook the chicken until well browned in the heated oil at medium-high heat in a large skillet.
  • 2 add the mushrooms, onion and garlic.
  • 3 cook and stir for 3 minutes.
  • 4 add all of the other ingredients except for the tomato.
  • 5 mix well and bring to a boil.
  • 6 reduce the heat.
  • 7 cover and simmer for 15 minutes, stirring occasionally.
  • 8 add the tomato and if desired, more fresh basil, and stir to combine.
