Creamy Orzo W/feta & Sun-dried Tomatoes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups chicken broth
  • 1/2 cup orzo pasta
  • 2 tablespoons sun-dried tomatoes packed in oil, minced
  • 2 tablespoons feta cheese, crumbled
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon pepper

Recipe

  • 1 bring broth to a boil in a small saucepan and stir in orzo.
  • 2 return liquid to a boil.
  • 3 cook orzo, uncovered, stirring occasionally until liquid is absorbed, approximately 9 minutes.
  • 4 remove saucepan from heat.
  • 5 stir tomatoes and feta into orzo, mixing until feta melts slightly.
  • 6 season orzo with salt & pepper.
  • 7 serve with the chicken roulades.
