Coconut Corn Squares

Ingredients
- 1 cup plain flour
- 1 cup yellow cornmeal
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 eggs
- 1 cup milk
- 90 g butter, melted
- 1 cup coconut
Recipe
- 1 sift flour, cornmeal, sugar, baking powder, salt and cinnamon together in a large bowl.
- 2 break eggs into a smaller bowl, add milk and melted butter.
- 3 add coconut and stir till well combined.
- 4 make a hole in the centre of flour.
- 5 pour in milk/coconut mixture.
- 6 stir till just combined.
- 7 grease a shallow 20 cms square tin.
- 8 spoon in the batter.
- 9 bake at 200 c for about 35 minutes.
- 10 cool on wire rack and cut into 9 large squares.
- 11 serve with butter and jam.
