Coconut Corn Squares

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 1 cup plain flour
  • 1 cup yellow cornmeal
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 cup milk
  • 90 g butter, melted
  • 1 cup coconut

Recipe

  • 1 sift flour, cornmeal, sugar, baking powder, salt and cinnamon together in a large bowl.
  • 2 break eggs into a smaller bowl, add milk and melted butter.
  • 3 add coconut and stir till well combined.
  • 4 make a hole in the centre of flour.
  • 5 pour in milk/coconut mixture.
  • 6 stir till just combined.
  • 7 grease a shallow 20 cms square tin.
  • 8 spoon in the batter.
  • 9 bake at 200 c for about 35 minutes.
  • 10 cool on wire rack and cut into 9 large squares.
  • 11 serve with butter and jam.
