Chicken Curry (once A Month Cooking)

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • Servings: 10
  • 8 cups cooked brown rice
  • 1/2 cup olive oil
  • 2 cups chopped onions
  • 1/2 cup chopped green pepper
  • 6 cups cooked chicken, chopped
  • 2 tablespoons flour
  • 2 tablespoons curry powder
  • 1 1/2 teaspoons salt
  • 1 cup water
  • 1/2 cup lemon juice
  • 2 cups tomato sauce
  • 4 cloves garlic, crushed

Recipe

  • 1 cook onion and green pepper in oil until tender.
  • 2 add chicken.
  • 3 sauté briefly.
  • 4 in separate bowl mix flour, curry powder and salt.
  • 5 slowly stir in water and lemon juice to make paste.
  • 6 add tomato sauce and garlic and pour mixture over chicken mixture.
  • 7 mix.
  • 8 to freeze, freeze in ziploc plastic bag.
  • 9 freeze rice in separate ziploc bag.
  • 10 to serve, thaw.
  • 11 place rice in casserole dish.
  • 12 place chicken mixture over top of rice.
  • 13 heat through on 350°, about 30 min.
