Brown Rice Fruit Salad

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 3 cups cooked brown rice
  • 8 ounces pineapple tidbits, drained
  • 1 pear, chopped
  • 1/4 cup golden raisin
  • 1/2 cup pecans, chopped
  • 1 cup vanilla yogurt
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 1 teaspoon poppy seed

Recipe

  • 1 mix together the rice, pineapple, pear, raisins and pecans.
  • 2 in separate small bowl, prepare dressing and mix well.
  • 3 stir the dressing into the salad mixture and refrigerate for one hour before serving.
