Ingredients

- 1 cup brown rice
- 2 cups vegetable stock
- 1 (4 ounce) can mushrooms, drained
- 1 tablespoon olive oil
- 1 teaspoon rice vinegar
Recipe
- 1 combine all ingredients in a medium saucepan. mix well.
- 2 bring to a boil.
- 3 reduce heat and cover.
- 4 simmer for 45-50 minutes or until rice is tender.
- 5 stir, remove from heat, covered and allow to stand for 5 minutes.
