Boston Brown Bread

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • 1 cup whole what flour
  • 1 cup rye flour
  • 1 cup yellow cornmeal
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 cups buttermilk
  • 3/4 cup molasses
  • 2 tablespoons vegetable shortening, melted
  • 1 cup seedless raisin

Recipe

  • 1 mix flours, conrmeal, baking powder, saltand soda in a large bowl
  • 2 stir in buttermilk, molasses, shortening and raisins until very well mixed.
  • 3 spoon batter into 4 well greased1 pound vegetable or fruit cans.
  • 4 cover with foil and tie with a string.
  • 5 place cans on rack in a dutch oven or large saucepan.
  • 6 pour boiling water until halfways up sides of cans.
  • 7 cover and simmer for 3 hours.
  • 8 pour in more water if nessacary.
  • 9 remove from dutch oven and remove foil.
  • 10 cool in cans for 10 minutes then invert cans.
