Boston Brown Bread

Ingredients
- 1 cup whole what flour
- 1 cup rye flour
- 1 cup yellow cornmeal
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups buttermilk
- 3/4 cup molasses
- 2 tablespoons vegetable shortening, melted
- 1 cup seedless raisin
Recipe
- 1 mix flours, conrmeal, baking powder, saltand soda in a large bowl
- 2 stir in buttermilk, molasses, shortening and raisins until very well mixed.
- 3 spoon batter into 4 well greased1 pound vegetable or fruit cans.
- 4 cover with foil and tie with a string.
- 5 place cans on rack in a dutch oven or large saucepan.
- 6 pour boiling water until halfways up sides of cans.
- 7 cover and simmer for 3 hours.
- 8 pour in more water if nessacary.
- 9 remove from dutch oven and remove foil.
- 10 cool in cans for 10 minutes then invert cans.
