Baked Chicken And Garlic Orzo

Ingredients

- nonstick cooking spray
- 4 boneless skinless chicken breast halves
- 1/4 cup dry wine
- 10 ounces uncooked orzo pasta
- 1 cup chopped onion
- 4 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried oregano leaves
- 1 (14 ounce) can chicken broth
- 1/4 cup water
- paprika
- 1 teaspoon lemon pepper
- 1/4 teaspoon salt
- 2 teaspoons olive oil
Recipe
- 1 preheat oven to 350.
- 2 spray large nonstick skillet with cooking spray.
- 3 heat over high heat until hot.
- 4 add chicken breast halves.
- 5 brown meat side down, 1 to 2 minutes or until lightly browned; set aside.
- 6 reduce heat to medium-high; add wine.
- 7 stir with a flat spatula, scraping brown bits from bottom of pan.
- 8 cook 30 seconds or until slightly reduced; set aside.
- 9 spray 9-inch square baking pan with nonstick cooking spray.
- 10 add pasta, onions, garlic, parsley, oregano, chicken broth, water and wine mixture; stir.
- 11 place chicken breasts on top.
- 12 sprinkle lightly with paprika and lemon pepper.
- 13 bake, uncovered, 1 hour and 10 minutes.
- 14 remove chicken.
- 15 add salt and olive oil to baking pan; mix well.
- 16 place chicken on top.
- 17 serve.
