Baked Chicken And Garlic Orzo

Total Time: 1 hr 20 mins Preparation Time: 5 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 4
  • nonstick cooking spray
  • 4 boneless skinless chicken breast halves
  • 1/4 cup dry wine
  • 10 ounces uncooked orzo pasta
  • 1 cup chopped onion
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano leaves
  • 1 (14 ounce) can chicken broth
  • 1/4 cup water
  • paprika
  • 1 teaspoon lemon pepper
  • 1/4 teaspoon salt
  • 2 teaspoons olive oil

Recipe

  • 1 preheat oven to 350.
  • 2 spray large nonstick skillet with cooking spray.
  • 3 heat over high heat until hot.
  • 4 add chicken breast halves.
  • 5 brown meat side down, 1 to 2 minutes or until lightly browned; set aside.
  • 6 reduce heat to medium-high; add wine.
  • 7 stir with a flat spatula, scraping brown bits from bottom of pan.
  • 8 cook 30 seconds or until slightly reduced; set aside.
  • 9 spray 9-inch square baking pan with nonstick cooking spray.
  • 10 add pasta, onions, garlic, parsley, oregano, chicken broth, water and wine mixture; stir.
  • 11 place chicken breasts on top.
  • 12 sprinkle lightly with paprika and lemon pepper.
  • 13 bake, uncovered, 1 hour and 10 minutes.
  • 14 remove chicken.
  • 15 add salt and olive oil to baking pan; mix well.
  • 16 place chicken on top.
  • 17 serve.
