Chicken Orzo Salad

Ingredients
- 1 (14 1/2 ounce) can diced tomatoes with basil, garlic and oregano, drained, liquid reserved
- 2 tablespoons olive oil
- 1/4 cup mint, chopped
- 2 garlic cloves, minced
- 8 ounces orzo pasta, cooked and drained
- 1 (10 ounce) can chicken, drained or
- 1/2 lb chicken, cooked and cubed
- 1 medium cucumber, unpeeled and diced
- 1/4 cup green onion, chopped
- 2 ounces feta cheese, crumbled
- 1 cup fresh spinach, shredded
Recipe
- 1 in a small bowl, combine reserved tomato liquid, olive oil, mint and garlic to form dressing; stir.
- 2 in a larger bowl, combine cooled pasta, diced tomatoes, chicken chunks, cucumber, green onion and feta. add tomato dressing and toss to coat.
- 3 refrigerate to chill, at least 30 minutes. stir in spinach just before serving.
