Brown Rice Salad With Apples

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 3 cups brown rice, cooked
  • 1 granny smith apple, diced
  • 2 celery ribs, finely chopped
  • 1 red bell pepper, chopped
  • 1/2 bunch green onion, chopped
  • 1/2 cup walnut pieces
  • 1 cup cooked chicken, cubed
  • 3 tablespoons flat leaf parsley, chopped
  • 1/4 cup apple cider vinegar
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • salt and pepper, to taste

Recipe

  • 1 in a mixing bowl, combine cooked rice with all other ingredients.
  • 2 toss mixture lightly.
  • 3 serve at room temperature or chilled.
